This week we say hello to the faces behind Howes Creek Farm – Jackie and Matt

1. Who are the people behind Howes Creek Farm?

Jackie and Matt are the brains and the brawn behind Howes Creek Farm. We do everything from looking after the pigs, to making the sausages, charcuterie and preserves in our kitchen on the farm.

2. Tell us a little bit about the range  of products that we can expect from Howes Creek Farm…..

We sell a variety of pork products and preserves at the monthly Mansfield Farmers Market.

Our pork sausages come in several varieties to suit all tastes. All sausages are made using only the freshest pork and natural skins. There are no added nitrates in any of our sausages, meaning our sausages not only taste great, but are actually good for you too!

We also produce a variety of quality terrines and pates. These are made using home grown and locally sourced ingredients. If you’re visiting Mansfield for the weekend, you’ve probably travelled further than any part of our products!

To complement our pork products, we have a range of exclusive preserves and condiments. These include Lemon Chutney, Tomato Chutney, Orange Marmalade and Preserved Cherries. Each preserve and condiment is made from seasonally available, home grown and locally sourced ingredients. So get in quick to get your favourites, because stocks are strictly limited to the seasonal availability of each ingredient.

3. What is the story behind Howes Creek Farm?

We moved to Mansfield about six years ago, after visiting the area regularly for a number of years. We love the High Country – the natural beauty, the fresh air and the people.

Our farm started as a bit of a hobby farm, with only a few cows and pigs. We did a salami and sausage-making course, which was a bit of fun, so we started practicing our newfound skill at home with our own meat and sharing it with our friends and family. The feedback was fantastic! So here we are, growing our own pork to use in making our own sausages and terrines.

I’ve always worked in hospitality and found a great joy in cooking for people. This can be seen in my continued creation of new pates, terrines, preserves and condiments to complement our pork products. Matt’s uncle was a butcher in the UK and used to sell his sausages to Harrods. When we first started out, we used his recipe and have had nothing but positive feedback about it. Needless to say, some of our delicious sausage recipes will remain a secret!

In addition to our pigs, we have herbs, vegetables and fruit growing on the farm. We aspire to be able to source as many of the ingredients for our products from our own farm as possible, to ensure that everything in our products are the freshest possible. Our intention is to maintain our business at a size that ensures we can guarantee the best-quality paddock to plate production possible.

4. Where is Howes Creek Farm?

Howes Creek Farm is located on Howes Creek Road, just 10km from Mansfield. Our 20-acre Farm is home not only to our Berkshire Pigs, but also the place where we grow as many of the ingredients to our products as possible, including vegetables and herbs. A new orchard has just been planted to ensure the freshest, home grown fruit is available for our preserves and condiments.

5. What is your favourite way to enjoy your sausages and pork products?

Nothing beats a sausage on the barbecue! A few minutes over low heat will ensure our sausages cook through, while maintaining the juicy goodness of our fat, English style sausages.

If you’re a fan of a cooked breakfast, our lemon chutney with our bacon is also a great way to start off a Sunday!

6. We know that you both love coming to the Mansfield Farmers’ market and not only having a chat but also taking home some delicious products in your market basket.  What are your favourites on market day? 

When I’m able to sneak away from the stall at Mansfield Farmers Market, I love stocking up with Mojo Muesli – it makes a great breakfast! Also, the Sourdough from Boonderoo Farm goes beautifully with soup or with eggs and bacon for a good old-fashioned, cooked breakfast. The best fudge I’ve tasted from the Maindample Imperial Produce Company is also a must!
