This week we say hello to the faces behind Chocolaterie RenMar Rene and Martin Slack (RenMar)

Tell us a little about your business.  

We purchased a rural property with a hydroponic tomato growing business and moved to Mansfield 6 years ago. After 2 successful, but physically tough years growing gourmet snacking tomatoes, we felt that it was time to give our bodies a rest!

So, a year ago, René went to a chocolate and patisserie school to be trained in chocolate-making skills. After building a chocolate kitchen and investing in a range of equipment for tempering and moulding our chocolates, we launched our range at the various Farmers’ Markets in the Northeast region.

We produce and sell handmade chocolate slabs, bars, hot chocolate spoons, Rocky Road, Coconut Roughs, Freckles and chocolate frogs, Kangaroos and Koalas. All of our chocolate is made from the finest quality Callebaut Belgian couverture, tempered, moulded, packaged and stored in tightly controlled conditions. It is gluten free and the dark chocolate is high in omega 3.

We have introduced some innovative flavours, such as our Alleppo Pepper dark chocolate, made with a red Capsicum-based spice from northern Syria. We introduce new flavours regularly as we receive requests and feeback from our regular customers.

We offer chocolate making classes for groups of 4 or more and we cater for weddings and events with chocolate fountains and handmade filled chocolates.

Where do you make your delicious chocolates?

Our custom-designed chocolate kitchen is located on our rural property below The Paps on the banks of Lake Eildon. We have a perfect view of Mount Buller across the lake – a great place to find inspiration for innovative artisan chocolate creations!

Is there a “best way” to enjoy your chocolates?  

Our favourite time to enjoy dark chocolate is with a glass of wine. We also love to have a block (or 6) of milk chocolate as dessert after a meal. But, for us, any time is chocolate time, especially with friends!

We know that you love coming along to our markets – because you have an opportunity to talk to lots of people.  If you have the chance to duck out of your stall and do some shopping, what do you put in your market basket?

We love to buy Ros Ritchie Shiraz because it matches our Alleppo Pepper dark chocolate perfectly.

We also like Ross Tomatoes (particularly the mini varieties) because they add such beautiful colour to salads.

Long Lane Capers are absolutely beautiful – a real foodie’s delight. We especially like the caperberries, which are delicious with salmon dishes.

And, Jeni’s MIPC fudge is great – also produced on the farm with such an innovative range of flavours and ingredients.
