Local is Lovely – Catriona Wilson

Welcome to our “Local is Lovely” series where we catch up with some Mansfield locals to talk to them about what they love about food and the local area!

This week we say hello to a local accommodation operator – Catriona Wilson.

Can you please tell us about your business?  

My husband James and I started Alpine Country Cottages 25 years ago. Having just married in 1991 we looked at a map of Australia and saw the area had snow, water, mountains and rivers and thought that was where we would like to live for a couple of years and fast forward 25 years and we are still here- and loving it!

James got a job as an accountant and as a trained teacher I applied for jobs but there were none available. I thought outside the square and the idea of accommodation came to mind. We had a heritage style home with some land and the building works began. We built 5 cottages in total and would offer a full cooked breakfast and a-la-carte dinner service. Once our children  Liam and Hayley came along we scaled back to breakfast hampers. 12 years ago we sold 4 of the cottages and the main home stead, keeping our Lavender Cottage.

We then built a modern 2 bedroom apartment, Studio 7. Both are still operating as Self Contained accommodation and we also operate a house in Robe South Australia. James and I are also Directors of the Mansfield Armchair Cinemas which we set up with the amazing support of the community 6 years ago. I love being involved in our families interests, running, snow skiing, sailing, bushwalking and being involved in community group including FREEZA and Meals on Wheels.

Do you have a favourite season for produce?  

My favourite Autumn produce are  apples and pumpkins, in Winter I love cauliflower, Spring is asparagus and Summer favourites are tomatoes and sweetcorn.

What about a favourite time of the year in Mansfield?

I love Mansfield all year round as we have 4 distinct seasons. Hard to call but I would have to tie for Spring and Summer.

When you come to the Farmers’ Market what are the items that always end up in the your market basket?

At the farmers markets I love exploring all of the stalls but I really like the pasta, meat, bread, berries when in season and the Tin Shed apple cider.

Do you have somewhere that you would like to share with us that you love to visit?

My favourite place to visit in the Mansfield Shire is the river side at Jamieson over the summer months. We love to go on Sundays with family and friends, take a picnic, the lilos and kayaks and enjoy the beauty- an all just a half hour from home!

A favourite recipe to share? 

Pumpkin gnocchi

Ingredients

  • 1 kg of butternut pumpkin
  • 4 cloves of garlic skins removed
  • 4 tablespoons olive oil
  • 375 gms Ricotta
  • ¾ cup grated parmesan
  • 150gm of  semolina or polenta
  • 3 eggs

Parmesan and pine nut sauce

  • 1 cup of good chicken stock
  • 1 ½ cups of cream
  • ½ cup of parmesan
  • 150 gm of cold butter cut into 1 cm dice
  • ¼ cup of chopped chives
  • ¼ cup roasted pine nuts

Method

To make the gnocchi:

  1. Preheat the oven to 180 degrees.
  2. Peel pumpkin, remove seeds and cut into 3cm dice.
  3. Place diced pumpkin, garlic and oil into a heavy based dish and bake for 45 minutes or until the pumpkin is soft.
  4. Allow to cool and turn the oven down to 160 degrees.
  5. Line a 25cm  tin with greaseproof paper.
  6. Place pumpkin, garlic , ricotta, parmesan and polenta into a food processor and puree until very smooth.
  7. Add the eggs, one at a time then pour into the baking dish.
  8. Bake for 30-40 minutes or until firm.
  9. Cut into squares.

To make the sauce:

  1. In a saucepan reduce the chicken stock to about ¼ of a cup.
  2. Add the cream and let simmer for about 3 minutes.
  3. Take the saucepan off the heat and whisk in the cold butter (having it cold will prevent it from separating).
  4. Just before serving add the chives and pinenuts.
  5. Pour the sauce over the gnocchi and garnish with a little shaved parmesan.
